It’s not on the Baja Famous Fish Tacos menu, but owner Jeff Mogalian’s Paloma recipe would make the perfect accompaniment to takeout tacos! A little smoky (thanks to the mezcal), a little tart (from the grapefruit juice), a little picante (from the Tajín), it’s a refreshing twist on a classic Mexican cocktail.
Makes one cocktail.
Ingredients
1 ounce premium mezcal
1 ounce silver tequila
4 ounces freshly squeezed grapefruit juice
Soda water
Ice
Tajín/sugar-rimmed glass (see below)
Grapefruit wedge for garnish
For the rim:
Mix 1 teaspoon of Tajín Clásico seasoning with ½ teaspoon sugar and place on a flat plate. Wet rim of glass with lime and roll rim of glass in the Tajín mixture before adding the cocktail to the glass.
Note: Tajín Clásico, a blend of chili peppers, lime, and sea salt, is available at Safeway, Target, and online retailers.
For the cocktail:
Mix in a shaker with ice the mezcal, tequila, and grapefruit juice.
Pour over fresh ice in the Tajín-rimmed glass.
Top with soda water.
Place grapefruit garnish on rim and serve.
